Plum & Elderberry Soda

RECIPE (makes 1 quart):

  • organic plums - 1 cup

  • elderberry syrup - 2 tbsp

  • filtered or spring water - 4 cups

Step 1

Chop plums into quarter inch pieces and add to a clean quart size jar. Add in the elderberry syrup and top off with your water. Place your lid on and give it a good shake to mix everything up together. Set aside someplace where you’ll remember to check on it in about two days. This process can take up to four days so just be patient. What you’re looking for are a whole bunch of tiny bubbles to form when you gently shake the jar.

Step 2

When stage 1 is complete, go ahead and drain out the fruit… Set the fruit aside you can still snack on that! Then add the strain liquid to a vessel that has a snug fitting lid. This stage takes a watchful eye! Each day “burp” your for ferment for two reasons:

❣️one is to check how bubbly it is! If it’s super bubbly, then your ferment is done.

❣️The other is to let out some of the air otherwise a delicious messy explosion could rise.

When you have reached your desire fizziness, your plum elderberry soda is ready to drink. From here you can store your soda in the fridge to stop the fermentation process and enjoy within two weeks.
